Mom on the Go: Recipe for easy cooking in the Crock-Pot

"Because Gabby wants to have dinner ready when she walks through the door, she's come to rely on her slow cooker. Her first experiments with this appliance led to dried-out dishes."

She shared her recipe for Moroccan Chicken with writer Tracey Broussard and the Sun Sentinel.

Tracey writes: "The recipe contains enough liquid so the cooker can be set on low and heat all day without the dish drying out. Olive oil assures the dish is heart healthy; olives and dried prunes provide a salty-sweet depth of flavor yet are healthful ingredients. Although Gabby does not add any salt to the dish, it can be added to taste."

"This dish pairs well with either couscous or rice. Gabby prefers couscous because it takes only five minutes to make and has the same ethnic background as the chicken dish. Gabby also likes that the recipe makes eight servings. She can refrigerate or freeze leftovers."

Now if you could just convince my husband that it's OK to leave the crockpot on all day while no one's home. He's so afraid we're going to come home to a burnt down home that he refuses to let us do it.

No need to convince this husband: anyone who doesn't allow the cook in the family to use a crockpot should be arrested for spousal abuse! Tell him a MAN said that!

There are some Crock-Pots that have been recalled over the years so make sure you're not using one of those. Check with the maker of your Crock-Pot or Consumer Reports magazine.

In 2004, Consumer Reports announced the recall of Rival Crock-Pots because the "handles on the base that could break and allow the pot's hot contents to spill onto consumers."

Well for the most part, my husband is the cook in the family (since he gets home before me and can't wait until I get home to make dinner because he and the little one are "starving"). I have suggested the crockpot for an alternative to the same old meals (and time saving for him). But he's not interested!

No spousal abuse here : )

There's only me in my home, so if I don't cook it..there's nothing to eat. I use a Crockpot all the time. It makes excellent "manly" style meals. I make the best BBQ pulled pork, chili, sausage/peppers, pasta sauce, roast meat and gravy for French Dip sandwiches, mac and cheese, fruit cobblers. You name it and I can cook it in a Crockpot. I spent 50 bucks and got what I think is a very good one. It has a timer so that after cooking for whatever time is programed, it drops down to a warming temperature until I'm ready to eat. I drop stuff in when I leave in the morning or if I come home at lunch...by dinner time it's ready to go. It also makes a great way to reheat frozen meals while I'm watching sports on television. No stirring or burning my dinner while I'm "checking" the score. Drop it in and hour or two later..it's ready to go.

If your husband can't leave the Crockpot unattended all day. Does he also unplug the refrigerator every time he leaves the house? What about the clothes dryer, television, water heater, computer. Seriously, if he's that paranoid about the Crockpot bursting into flame...which is ironic as most of my other cooking ends up that way...just plug the Crockpot into a receptacle on an outside patio. Just send me your address so I can sample what's for dinner : )

My first few forrays into crock pot cooking were also less than successful. I used the wrong kinds of meats, didn't let it cook long enough, etc... While I'm willing to try it again, the truth is that my favorite type of "all day" cooking remains marinating then grilling. Not everything is a stew that way!
